Vata
If you get cold hands, patchy sleep, bloating and a mind that will not stop planning, that is Vata talking.
Pitta
If you are sharp, driven, run hot, and get irritable when a meal is late, that is Pitta.
Kapha
If you are steady, patient, slow to wake and slow to change, that is Kapha.
A plate is balanced when all six tastes are on it.
Not a rule about flavour, a rule about coverage. Miss a taste for long enough and you start craving it in the wrong form.
Madhura
Rice, ghee, dates. Builds and steadies.
Amla
Lemon, tamarind, curd. Wakes appetite.
Lavana
Rock salt. Holds moisture in.
Katu
Ginger, pepper. Lights digestion.
Tikta
Neem, methi, greens. Cools and clears.
Kashaya
Pomegranate, lentils. Dries and tightens.
